What makes a good smoking pellet

Three things: what the pellet is made of, how dry it is, and what else is in it. Ours are pressed from 100% virgin hardwood with no bark, no binders and no flavour oils. Bark is the usual culprit behind acrid smoke and heavy ash, and binders produce off-flavours that carry straight into the food.

Moisture content below 10% matters just as much. A wet pellet smoulders, produces dirty white smoke and drops your grill temperature. A dry pellet lights fast and gives the thin blue smoke you actually want.

Flavour profile

Oak is the reliable all-rounder of smoking woods — medium strength, clean, slightly sweet, without the sharpness of hickory or the sweetness of fruit woods. It is the traditional choice for beef and lamb in British and European cooking, and it will not overpower pork or poultry over a long cook.

Beech runs milder still and is the classic continental choice for fish, sausage and cheese. Blended, they give a balanced smoke that suits almost anything you would put in a smoker.

  • Lamb — stands up to the meat without competing with it
  • Pork shoulder and ribs — long cooks where a milder smoke avoids bitterness
  • Poultry — clean smoke that does not overwhelm the skin
  • Cold-smoked fish and cheese — beech-forward, in a tube or generator

Who buys by the tonne

Branded BBQ pellets retail around £20–30 per 9kg bag — roughly £2,200–3,300 per tonne. At £700 delivered, a pallet makes sense for barbecue restaurants and smokehouses running daily cooks, catering and event companies, food producers cold-smoking at volume, competition teams, and retailers repackaging under their own label.

If you are a domestic user, a tonne is a lot of pellets — but stored dry they will not spoil, and the cost per cook is a fraction of branded bags.

Compatibility

Standard 6mm pellets, compatible with the great majority of pellet grills, smoker tubes, smoke generators and pellet smokers on the UK market. Check your manufacturer’s fuel specification if your appliance is unusual — a few require a proprietary pellet size.

Note that these are hardwood fuel pellets. They contain nothing but wood, which is what you want in a smoker, but they are not sold as a food product and are not flavour-infused.
